What's for dinner?

Tomato and Basil Angel Hair Toss

INGREDIENTS:
1/2 cup olive oil
4 cloves garlic, minced
1/2 cup sliced green onions
6 large tomatoes, peeled & diced
1 large bunch fresh basil, chopped
2 teaspoons salt
1/2 teaspoon fresh ground pepper
1 lb. Angel hair pasta
fresh grated parmesan cheese, to taste

DIRECTIONS:

Heat oil in large pan. Add garlic and green onions. Stir-fry for 2-3 min. Add tomatoes, basil, salt and pepper. Simmer on low heat, stiring frequently. Prepare pasta according to package directions. Drain and toss hot pasta with tomato mixture. Sprinkle with Parmesan cheese and serve immediately.

To peel tomatoes: score the bottom of the tomato. Blanche each tomato in boiling water for 15-30 seconds, place hot tomato in a bowl of ice water and the skin peels off easily.

Ryan and I love, love, love this dish! It is good hot or cold. We think it tastes better when it is at least a day old if not a couple. Ryan told me we should ALWAYS have this in the fridge!
OK EVERYONE......

I'm so glad you posted a recipe! I'm always looking for something new to cook..here's one of my favorites, I make it all the time and it's soo so easy!

Chicken & Rice Casserole..
YOU WILL NEED:
-x amount of chicken breast (i use 2-4)
-Rice (i use minute rice)
-1 can of campbell's cream of chicken
-1 can of campbell's cream of mushroom
-Shredded cheese (i use mild cheddar)
-Ruffles chips

heat your oven to 375
in a 13x9 glass pan...
put the chicken at the bottom of the pan...
mix the cream of chicken and cream of mushroom together in a bowl and then use the empty cans to add 2 cans of rice and 2 cans of water. Mix all together and pour over the top of the chicken..
cover with tin foil and cook for 45 min..
pull out of the oven after 45 min and add the ruffles chips on top of the rice and then add cheese on top of the chips, then put it back in the oven UNcovered for 15 min. Thats it! DELISH! I hope I explained that ok! haha
